When I read the title of this recipe, I was undecided. Because it’s a banana oat yogurt muffin. Healthy doesn’t always mean tasty.
Then I saw the picture:

Why didn’t the title lead with the chocolate chips, for crying out loud!? Chocolate Chip Banana Oat Greek Yogurt Muffins? Yes, I’ll try one of those, even if the title has way too many words. Or I could try twelve.
Try them I did, with one minor tweak. The recipe tells you to blend all of the ingredients except for the chocolate chips in a food processor/blender until they’re smooth and creamy. But I love the texture of oats, and I didn’t want to lose out on all of that. So instead of putting all 2 cups of oats into the blender, I put in 1.5 cups and kept half a cup out for later. Then when I mixed in the chocolate chips, I also mixed in the remaining oats. They were delicious–the first two, anyway. I’m trying to pace myself a little bit.
They aren’t the fluffiest muffins in the land. They are, however, the only muffins I feel good about eating. And there’s chocolate! If you’re going to stand there and tell me that I can make something in 15-20 minutes that tastes like chocolate chip banana bread and isn’t terrible for me, I’m going to take you up on that offer with a smile.
