Hanger-Busting Grilled Sweet Potato Wedges with Orange-Molasses Butter

I’ll admit that I was mean last night.  It wasn’t pretty, but there was a shining moment in there.  That shining moment was called Bobby Flay’s Grilled Sweet Potato Wedges with Orange-Molasses Butter.  If they tasted perfect when I was angry, I can only imagine how awesome they would be in a good mood, maybe on a porch with a setting sun in the background.  Early fall perfection is what I call that.

The recipe is definitely up to Bobby’s normal high standard.  The orange molasses butter on top?  Now that’s the magic.

I do have a suggestion for the butter, however.  Cut down on those ingredients!  You absolutely don’t need 1 1/2 sticks of butter to make those sweet taters sing.  Try it with 3/4 of a stick of butter and 1/8 cup of molasses, and adjust what you need for the next batch from there.

These taters are crispy on the outside, soft on the inside, with plenty of sweet and buttery on top.  Mmm!
