I picked out a few too many recipes last week, which is just fine by me. It means I don’t have to go grocery shopping until Tuesday instead of Monday this week. I love procrastinating! It also means that we had Giada’s Grilled Salmon with Pineapple and Avocado Dressing last night. Mmm. And for lunch right at this very moment.

This was even better than I was expecting it to be. I’m not a huge pineapple fan, which definitely influenced my thinking. But it looked healthy, so I went for it. Turns out that grilled pineapple is awesome, and the recipe overall is healthy and fancy and quick and wonderful all together. The avocado dressing is important, and I (as a confirmed glutton) recommend doubling the suggested avocado dressing amount. Sure, the suggested amount is healthier. But double the dressing is darn good. I also went ahead and served this with a small serving of rice. We get hungry. Sometimes a piece of salmon and a piece of fruit just doesn’t make our stomachs happy.
As for the Easter food report… The ham got an A+ again. I’m telling you, Tyler Florence knows how to make a Tangerine Glazed Ham (as does Scott). The hot cross buns turned into hot cross cookies, due to some unfortunate rising/timing issues on my part. But I think the recipe has merit. I’m going to try it again next year with a little bit of orange zest in the icing to give it extra flair. That’s the plan. Hopefully I’ll remember it a year from now.
