Mac. And. Cheese. (Always a good choice?)

What is the best thing to do right after you decide to eat healthier food for a while?  Get a new cookbook full of carbs and cheese, of course.  I got a Barnes & Noble gift card for Christmas (free books!!!!), and I was pretty darn pleased with how far it stretched.  It turned into a Moleskine planner (my favorite AND on sale), a deeply discounted book for funsies, a Big Bang Theory bookmark (to put me over the limit for free shipping), and this treasure:


In case you didn’t know, my mom’s macaroni and cheese with a crispy breadcrumb topping is my favorite thing to eat.  In the world.  That’s especially impressive, because there are a few million things I like to eat.  Good job, Mom!

ImageTake my favorite dish, throw in some spinach and artichokes and awesomeness, and I can only imagine how good it will be.  I’ll give you recipe details as soon as I’ve tested them out.  For now, I’ll be eating the spinach and the artichokes sans mac and cheese.  Soon.
