Buffalo Chicken for the Salad Crowd

I’ve said it more than once, so why not say it again?  If I can eat something healthy that feels like it’s not healthy, I’m in.  Absolutely in.  This Buffalo Ranch Chicken Salad from Half Baked Harvest definitely made that happen for me–delicious, not at all dry chicken with lots of good stuff coating every surface, a huge pile of veggies, cheese and creamy avocado, and an herby dressing to top it all.  Yes please.

(Side note: our toddlers didn’t enjoy the spicy chicken quite as much as we did.  Oops.  If your toddlers like spice, these are essentially the best chicken nuggets ever.  If they don’t, it might seem like their chicken has betrayed them.  They’ll forget about it eventually.)

So go get some chicken.  Oh, and I’ve honestly never made Buffalo chicken before, so it came as a surprise to me that Buffalo sauce is just butter and hot sauce.  I was scared at first, but I got over it when I took a bite of this meal.  Yum!

And now I’m going to go stir our actual dinner for tonight–an oldie but a goodie, Beef and Butternut Chili (only venison because free).
