First and foremost, happy May Day!

I used to love gathering flowers from my mom’s garden and putting them on the doorstep of a friend or neighbor we especially liked. Today, I’m being lazy and e-gifting flowers on your e-doorstep.
While you’re enjoying your e-flowers, how about a new recipe, too? We had these “Big Fat Greek Burgers” the other day (click on burger picture for recipe). I’ve done the whole turkey-burger-with-tzatziki-sauce thing, and it’s good. But I wanted to mix things up a bit with a new version of that, and I succeeded. I love the internet and its endless recipes.
This version isn’t any old burger. It’s a super simple turkey patty with stuffing. So much delicious stuffing. Dill and spinach and tastiness.
So what did I change from the recipe? Well, the buns weren’t included. That turned this recipe into a super healthy dinner option–nothing but turkey, veggies, yogurt, and a small amount of cheese. Perfect. I also skimped on the turkey, which was a mistake. Don’t do it! If anything, you should use 1.5 lbs. of meat instead of 1.25. I went with exactly 1 lb., and my burger was tiny. Delicious, but tiny. Lesson learned. That’s also why there’s a bunch of spinach/dill/onion/cheese mix on top of my burger. There wasn’t enough stuffing space in that teeny, tiny burger. Sigh.
What else? It’s been raining for 3 days, so Peanut has been hungry and listless for 3 days. Poor kid.
Can you feel the angst? No? Probably because he’s in his favorite sunny spot, and it’s no longer raining. It’s a good day for the P, even if his appetite hasn’t caught up with him yet.
I think that’s just about it–flowers, food, dog. Oh, and I reclaimed a room yesterday. It was turning into a pile of clothes to repair, clothes to give away, unused curtain rods (wanted to put them up after I paint rooms), and stacks and stacks of paper. Yesterday was a marathon session of filing and tidying, and the end result is beautiful. Open floor everywhere. I’ve never been so happy to see carpet in my life.
